Can we talk about this weather we are having right now? I can't even believe how amazing it is outside. I have been at the house this week with the windows and doors wide open letting the cool, fall-like breeze blow through the house. Man, it has felt good!
Right now I am sitting in the office at home with the windows open and a light jacket on. Absolutely perfect.
I love fall weather.
So, last week as I was roaming the grocery store in the midst of the almost fall weather and I spotted the oh so nostalgic oatmeal cream pies in that long white box.
Do you guys remember those? The ones your mom used to stick in your lunch box for school? Those things were perfection. Not only was the cookie perfectly chewy and moist, but the cream was so simply sweet and sticky and the most perfect compliment to the cookies. The worst part? They were gone in about 2 seconds.
Today, I have a recipe for my very own oatmeal cream pies! They are just as chewy and moist as I remember the good ol' ones to be. Give these babies a try and take an oatmeal cream pie bus down memory lane!
Enjoy :-)

for the cookies:
1.5 c. all purpose flour
1/2 t. salt
1/2 t. baking powder
1/4 t. baking soda
1/2 t. cinnamon
2 sticks unsalted butter, softened
2 eggs
3/4 c. packed dark brown sugar
1/2 c. sugar
1 T. molasses
1 t. vanilla
1.5 c. old fashioned oats
for the filling:
1.5 c. confectioners sugar
1/2 t. vanilla
8 oz. cream cheese, softened
1/4 c. marshmallow fluff
1. In a medium bowl combine the dry ingredients including the flour, salt, baking powder, baking soda and cinnamon Mix with a spoon until combined.
2. In a second large bowl beat the butter and eggs (one at a time) until combined with a stand mixer or hand mixer.
3. Add the sugars, molasses and vanilla into the butter mixture and beat until combined. About 1 minute.
4. Using the mixer on low gradually (about a 1/3 at a time) add the dry ingredients into the butter mixture, and mix until just combined before adding the next batch. Do not over mix!
5. Mix the oats into the cookie mixture by hand.
6. Drop spoonfuls of cookie mixture on a baking sheet (24 cookies) and bake in a preheated 350 degree oven for 10-11 minutes. After 11 minutes they looked soft and at the stage of almost being underdone. This is perfect! When they are out of the oven they will continue to cook and firm up, but still stay chewy and moist. This is how I bake all of my cookies. I love a soft chewy cookie!
7. Let cookies cool while preparing the filling.
8. Using a stand/hand mixer combine the filling ingredients in a medium bowl.
9. Once the cookies are cool spread the filling mixture (as much or as little as you prefer) onto one half of the cookie and top with another cookie. I used a couple of tablespoons of filling for each cookie and had leftovers. I thought a light mixture was perfect, but my mom thought they needed a tad more. Fill them up as your family desires!
10. Enjoy! Makes 12 cream pies.
Now get outside and enjoy this weather while it lasts!!!
