Happy Thursday, friends! This week has been all over the place. On Tuesday it felt like Monday and today it feels like Friday. What is going on?
Although the days are all blurring together we are this much closer to a long weekend! I had a change of plans and decided to stay in town instead of traveling to the beach this weekend. I could use some rest and some time to get some stuff done. Don't worry though, I'll still be enjoying my fair share of summer beverages and grilled food!
As promised, today I have for you a recipe which includes tequila!
So without further adieu, here are my light and refreshing summer margaritas. These babies would be perfect while hangin' poolside with some friends this weekend! Or ya know, doing whatever it is that you do! Just try these. They are a total winner!
Watermelon Margaritas

1/2 watermelon, chopped
1/2 c. water
1/2 c. sugar
1/4 t. salt
1-2 limes, juiced
4 shots of tequila
ice
salt, for serving

1. Start by preparing your simple syrup by simmering the water and sugar over medium low heat until the sugar is dissolved. Set aside to cool.
2. In a blender puree the watermelon until it is a liquid. Once, liquefied strain through a sifter into a bowl to keep only the juice and leave the seeds and pulp.
3. Combine simple syrup, salt, lime juice and tequila with the watermelon. Depending on the sweetness of your watermelon you may need to prepare additional simple syrup by using equal parts of sugar and water.
4. Prepare the margarita glasses by placing salt (or sugar if you prefer) on a plate and running a lime wedge across the rim of the glass. Run the wet rim through the salt (or sugar) mixture and set aside.
5. In batches blend about a cup of ice with 1/3 or so of the watermelon mixture. You can do this in stages through the night if you are only serving to a couple of people or all at once if you have more people.
6. Serve in the salted glasses with a lime wedge.
Serves 10-15 depending on your watermelon juice!
