One Pan Cheesy Sausage Pasta

The other night I made this fabulous, quick dish from the oh-so-amazing Amanda at kevinandamanda.com. Her food is always so amazing and her pictures just make you want to dive through your computer screen and take a bite!

I made her spicy sausage pasta dish and it was not only super quick and easy as she promised, but so creamy and the perfect amount of heat throughout, thanks to a can of Ro-Tel! How easy is that?!

Here is my recipe for Amanda's dish, but just a tad lightened up!



One Pan Cheesy Sausage Pasta

1 tbsp olive oil
1 lb smoked turkey sausage
1 medium diced onion
2 cloves garlic, minced
2 cups chicken broth
1 (10 oz) can Ro-Tel, mild
1/2 cup milk
8 oz short-cut pasta of your choice. I used mini penne here.
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 Italian blend cheese
1/4 cup chives

Saute the turkey sausage in a large skillet (with high sides & with lid) with the olive oil until both sides are browned. About halfway through add the onions to the pan. Once the sausage is browned and the onions are softened, add the garlic and saute for about a minute. Do not let the garlic burn, it will add a bitter flavor.

Next, add the chicken broth, tomatoes, milk, pasta, salt and pepper to the sausage. Combine ingredients and bring to a boil. Allow this to boil for a couple of minutes and then cover and reduce to  a simmer. Let this simmer for about 10 minutes or until pasta is al dente and sauce is thickened.
I checked on it every few minutes and gave it a good stir.

Serve with a sprinkle of cheese and chives on top for an extra hit of creamy, cheesy and onion-y bite!


Boy, was this a hit! My family gobbled it right up and we were all wishing for leftovers. Maybe we need to double next time!

This is such a fabulous dish because its an easy clean up. Who wants to slave over the sink washing dishes after such a wonderful meal? Not me! One pot clean up. Score!
